Distiller's notes: "Popularized by Scotch Whiskey distillers, finishing whiskies in used Sherry casks allows the delicate characteristics of past occupying products to mingle and marry with the smooth and bold characters of Doc Swinson's Straight Bourbons altering the bourbon to create a completely new experience for the bon vivant at heart. Often we find the sherry casks adds nuttiness, sweetness, and an irresistible shade of ruby to the bourbon profile while the cognac barrels add length of body, pear, apple, cinnamon and vanilla." Distiller's tasting notes: "Dry orange peel, leather, stewed apricot, pear covered in cinnamon, caramel, oak aged vanilla, and walnuts."
This Bourbon was finished in both Cognac puncheons and Sherry butts (Oloroso and PX), then bottled at a robust 47.9% ABV. The casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of the bourbon.
Tasting notes: Dry nuttiness, subtle sweetness with an extended finish. This Bourbon release from Doc Swinson brings the punch with all the spicy notes we love, but rounds them out with the secondary maturation. Never too sweet, but with added richness that Bourbon lovers will enjoy. Made with Bourbons no younger than 5 years of age, the whiskies are finished individually, then married. The spicy, new American oak character is never muted, however, and the end result tastes very much like a classic American whiskey simply with more bass notes.
